Renton Real Estate Blog And Apple Pie

Are you ready for winter?


As winter approaches, some turn their thoughts to cooking.

Nothing like the aroma, the memories of fresh baked goodies

when you come in from the cold.

 

I thought I would put up some old stand-by favorites. Enjoy …

Here is something else I found and was sure you would enjoy as well.


I was browsing the King Arthur Flour Web site and thought I'd share this recipe for Apple Pie with you. Enjoy!


If we had to choose a national dessert, apple pie would be at the top of the list. It's been part of our culture since Colonial days. This pie lets the apples tell the story, with a little bit of help from lemon juice, cinnamon, and some apple juice concentrate or boiled cider.


For the best apple flavor, use more than one variety of apple in your filling. Use apples that will hold their shape during baking: Jonagold, Granny Smith, Ginger Gold, Cameo, Northern Spy, and Delicious are some good choices.


And, when it comes time to serve, add a scoop of vanilla ice cream; or a slice of sharp cheddar cheese, as New Englanders often do.


Ingredients:

Crust

  • 2 1/2 cups Round Table Pastry Flour or King Arthur Unbleached All-Purpose Flour
  • 3/4 teaspoon salt
  • 1/3 cup vegetable shortening
  • 1/2 cup (1 stick) cold unsalted butter
  • 1/2 cup plus 1 to 2 tablespoons ice water

Directions

1) In a medium bowl, whisk together the flour and salt.


2) Cut in the shortening until it's in lumps the size of small peas.


3) Dice the butter into 1/2" pieces, and cut into the mixture until you have flakes of butter the size of your fingernail.


4) Add the water, two tablespoons at a time, mixing with a fork as you sprinkle the water into the dough


5) When the dough is moist enough to hold together when you squeeze it, transfer it to a piece of wax or parchment paper. It's OK if there are some dry spots in the pile. Use a spray bottle of water to lightly spritz these places; that way you'll add just enough water to bring the dough together without creating a wet spot.


6) Fold the dough over on itself three or four times to bring it together, then divide it in half and pat it into two disks 3/4" thick.


7) Roll the disk on its edge, like a wheel, to smooth out the edges. This step will ensure your dough will roll out evenly, without a lot of cracks and splits at the edges later. Wrap in plastic and refrigerate for 30 minutes before rolling.


8) Lightly grease a 9-inch pie pan that's at least 2 inches deep. This will make serving the pie easier after it's baked.


9) Combine the sliced apples and lemon juice in a large mixing bowl.


10) In a small bowl, whisk together the sugar, flour, cornstarch, salt, and spices. Sprinkle the mixture over the apples, and stir to coat them. Stir in the boiled cider or apple juice concentrate.


11) Roll out half of the pastry to a 13" circle. Transfer it to the prepared pan, and trim the edges so they overlap the rim of the pan by an inch all the way around.


12) Spoon the apple filling into the pan. Dot the top with the diced butter.


13) Roll out the remaining pastry to an 11" circle. Cut decorative vent holes, if desired. Carefully place the pastry over the apples.


14) Time to preheat the oven to 425°F.


15) Roll the overhanging bottom crust up and over the top crust, pinching to seal the two.


16) Flute the edges of the pie, then place it in the refrigerator for 10 minutes to firm up the crust while the oven finishes heating.


17) Place the pie on a parchment-lined baking sheet. Bake the pie for 20 minutes at 425°F, then reduce the oven temperature to 375°F and bake for 40 minutes more, until you see the filling bubbling inside the pie. Check the pie after half an hour of baking time, and cover the edges with foil or a pie shield to keep them from browning too quickly.


18) When the pie is done, remove it from the oven and cool it completely before slicing.

Oatmeal-Cranberry Muffins


Makes 12 to 14 Muffins

Ingredients:
• Nonstick cooking spray
• 1 1/4 cups old-fashioned rolled oats
• 1 1/2 cups all-purpose flour
• 1 teaspoon baking powder
• 1 teaspoon baking soda
• 1/2 teaspoon salt
• 2 eggs
• 1/2 cup sugar
• 1 8-ounce carton nonfat plain yogurt
• 1 pear, peeled, cored and chopped
• 1 apple, peeled, cored and chopped
• 1/2 cup dried cranberries


Directions:

1. Preheat oven to 350 degrees F. Lightly coat
12 to 14 muffin cups with nonstick cooking
spray or line muffin tins with paper liners.


2. In a small bowl, combine the oatmeal,
flour, baking powder, baking soda and salt.
In a mixing bowl, beat the eggs with the sugar
until blended. Stir in the dry ingredients,
yogurt, pear, apple and cranberries.
Spoon into muffin cups, filling each about 3/4 full.
Bake 20 to 25 minutes, or until the top of the
muffins spring back when lightly touched.

As every one knows, energy prices are on the rise across the nation. As a result, heating costs will consume an increasingly larger portion of a household's energy budget. That's why it's important to check your home to insure that your heating dollars aren't being wasted.


When cold weather approaches, use this checklist of simple ways to make your home more comfortable and keep those escalating energy bills at bay.


Check for Leaks


Weatherstripping and caulking is probably the least expensive, simplest, most effective way to cut down on energy waste in the winter. Improperly sealed homes can waste 10 to 15 percent of the homeowner's heating dollars. Take these steps:


Check around doors and windows for leaks and drafts. Add weather-stripping and caulk any holes you see that allow heat to escape. Make sure doors seal properly.


If your windows leak really badly, consider replacing them with newer, more efficient ones. Keep in mind, however, that replacing windows can be expensive - it could take you quite awhile to recover your costs from the energy savings alone. But new windows also provide other benefits, such as improved appearance and comfort.


Every duct, wire or pipe that penetrates the wall or ceiling or floor has the potential to waste energy. Plumbing vents can be especially bad, since they begin below the floor and go all the way through the roof. Seal them all with caulking or weather-stripping.


Electric wall plugs and switches can allow cold air in. Purchase simple-to-install, pre-cut foam gaskets that fit behind the switch plate and effectively prevent leaks.


Don't forget to close the damper on your fireplace. Of course the damper needs to be open if a fire is burning; but if the damper is open when you're not using the fireplace, your chimney functions as a large open window that draws warm air out of the room and creates a draft. Close that damper - it's an effective energy-saving tip that costs you nothing!


Examine your house's heating ducts for leaks. Think of your ductwork as huge hoses, bringing hot air instead of water into your house. Mostly out of sight, ducts can leak for years without you knowing it. They can become torn or crushed and flattened. Old duct tape - the worse thing to use to seal ductwork, by the way - will dry up and fall away over time, allowing junctions and splices to open, spilling heated air into your attic or under the house. It's wasteful.

Norma Cugini is Renton's 2008 Citizen of the Year


The City of Renton, Renton Chamber of Commerce and Rotary Club of Renton will honor Norma Cugini as the 2008 Citizen of the Year and Bob Bridge and Becky Nickels as Outstanding Citizens.


This award recognizes their dedication and exceptional contributions to the Renton community. The award ceremony will take place at the annual Citizen of the Year Banquet on Thursday, October 23, 2008, at 5 p.m. at Renton Technical College.


Citizen of the Year Norma Cugini has been involved in most of the major charitable projects in Renton. She recently served as the co-chair of the capital campaign to construct the Salvation Army Renton Rotary Food Bank. She also serves on the Renton Community Foundation Board of Directors and plays a key role in the Circle of Giving Campaign each year.
